Unless your Mama is Ruth Fertel…

this is not her sweet potato casserole.

The chain (Ruth’s Chris) was founded by Ruth Fertel, a single mother of two, in 1965, after she bought the existing Chris Steak House in New Orleans. In buying the restaurant, Fertel had to agree that the restaurant keep the "Chris" name for a specified period of time. –wikipedia

A few days before Thanksgiving Mrs. Howard posted this recipe and I knew we just had to make it for Thanksgiving. Oh my goodness I am so glad we did! It was a hit! We all loved it…..and I may have already made it again this week. I have adapted the recipe a little bit from the original, here is what I did.

Sugary Sweet – Sweet Potato Casserole

  • 1/2 cup packed brown sugar

  • 1/4 cup all-purpose flour

  • 1/2 cup (1 stick) butter, melted, divided
  • 2 cups mashed sweet potatoes (2 very large sweet potatoes)

  • 1/2 cup granulated sugar

  • 1/4 teaspoon salt

  • 1/2 teaspoon vanilla

  • 1/2 teaspoon cinnamon

  • 1 eggs, well beaten

1. Peel potatoes and cut into half inch cubes, boil until tender. Drain and mash with hand potato masher or electric mixer.

2. Make the topping. In a medium bowl, stir together brown sugar, flour, and 1/4 cup melted butter. Set aside.

2. Preheat oven to 350 degrees. In a large bowl, combine sweet potatoes, granulated sugar, salt, vanilla, cinnamon, egg and the remaining 1/4 cup melted butter. Use a hand mixer to combine thoroughly; continue beating until smooth and fluffy.

3. Pour sweet potato mixture into a buttered 9-inch square baking dish. Sprinkle evenly with topping.

4. Bake 30 minutes, until topping is lightly browned and crunchy.

Now go out and buy some sweet potatoes so you can make this tonight! It is that good! ENJOY!

I made this recipe tonight! YUMMY! I didn't understand that this was a different one than you told me about right before Thanksgiving until I looked back at your blog for the recipe. I think I liked this one better!
